Yoghurt and Dukkah Crusted Chicken with Aubergine and Bulgur Wheat

Another brand new flavour for me, Dukkah. A North African mix of nuts, spices and herbs. It is usually served with bread and oil. Here, however it is added to the chicken with yoghurt and then cooked making a tasty crust.

The Bulgher wheat tastes great when it’s cooked in stock. Adding the roasted pepper and aubergine to it further adds to depth of flavour. Roasting vegetables is by far my favourite way to cook them. The flavour they get from roasting in the oven with some olive oil is amazing.

I loved the Dukkah spice. It was subtle and aromatic uplifting all the other flavours around it. I’d like to try it as intended and have it with bread and oil.
