Courgette, Broad Bean and Feta Orzo with Pork Meatballs

If you can ignore the plating up and the pictures you’ll see that this is a fantastic meal, the range of flavours is immense. Orzo pasta works wonders carrying the flavours of the garlic and oil.

I never really saw the point of orzo pasta till now, the previous times I’ve had it, it was trying to be like a risotto except it never really worked as well. This time however I got it. It was soft like pasta with a slight bite and you tasted each piece as an individual unlike with risotto. The courgette and onion freshened the pasta and the broad beans gave a nice fresh burst of flavour when you bit into them. The salad was dressed in lemon juice and olive oil. I thought this would be too tangy but it actually complimented everything cutting through the oil and fat from the pork sausage.

The sausage was pork and oregano and had a lovely flavour. I like using sausage meat for meatballs they seem to have so much more flavour than making them from mince.
